Savory Carrot Bake

Ingredients

  • ~1 lb. carrots, shredded
  • 2 lg. cloves garlic
  • 1 small yellow onion.
  • 1 whole egg and one egg yolk
  • 4 T. sugar
  • 1 1/2 T. flour
  • salt and pepper to taste

Process

  1. Preheat oven to 375 degF.
  2. Use food processor to shred carrots.  Using steel blade, process onion and garlic.  Add salt and pepper and mix vegetable ingredients together.  Place in a 9"x9" baking dish.
  3. Mix egg, sugar, and flour.  Thin slightly with cream, white wine, milk, or water.  Pour over the carrot mixture, but do not mix it in.  Spread the egg mixture roughly cover the carrots.  Bake for approximately one hour, or until egg mixture begins to brown slightly.

Serves about four as a side dish.
